Ever wondered what gives authentic kimchi its beautiful red colour and incredible flavour?

The secret is Gochugaru—traditional Korean red chilli flakes made from sun-ripened peppers. Unlike regular chilli powder, gochugaru is naturally sweet, fruity, mildly smoky, and only moderately spicy, creating the perfect balance of flavour without overwhelming heat.

It’s the heart of authentic kimchi, adding vibrant colour, depth of flavour, and just the right amount of warmth while allowing the natural fermentation to shine.

At Feast of Eden, we craft our Kimchi sauce from scratch, using authentic gochugaru to craft kimchi the traditional way - raw, naturally fermented, and alive with beneficial microbes.

So, what makes kimchi so special?

Kimchi is a traditional Korean dish made by naturally fermenting vegetables with herbs and spices. During fermentation, beneficial lactic acid bacteria develop naturally, creating its signature tangy flavour and helping to support a healthy gut microbiome. It’s one of the world’s most celebrated fermented foods—and for good reason!

But what exactly is kimchi?

Kimchi is Korea’s iconic fermented vegetable dish, traditionally made with cabbage, radish, garlic, ginger, chilli, and other natural ingredients. Through natural fermentation, it becomes packed with living beneficial microbes, complex flavours, and nutrients.

What about microplastics?
